Thousands of Co-op Members have joined in to help us create our first-ever member-inspired ice cream, which will be hitting Co-op freezers in time for Spring 2022. 

More than 90,000 members got involved to share ideas for a delicious new flavour combination and to vote for their favourite. 

We can now reveal the new ice cream flavour that we will launch in Co-op stores next March is Raspberry Pavlova ice cream.  

It will include both meringue and raspberry flavoured ice creams and will be topped with raspberry sauce and meringue pieces. 

The Raspberry Pavlova ice cream 900ml tub will sit alongside the current Co-op ice cream range, which already includes our Triple Chocolate Sundae and Strawberry Trifle flavours. 

In March, more than 15,000 members joined in with the first stage of our discussions as we looked to understand their favourite ice cream combinations.  

Members gave us the scoop on their favourite ice cream flavours, toppings and the added extras they’d like us to mix together to create a new member-inspired ice cream. 

We asked members to tell us all about the desserts that made them think of summer, with Eton Mess, strawberries and cream, lemon tarts/meringue, summer pudding, cheesecake, fruit-flavoured Pavlovas, and chocolate desserts all proving popular choices. 

Our product development experts worked through the huge list of members’ suggestions to test out which flavours worked best, and a shortlist of 6 ice cream flavour combinations was created – Caramel and White Chocolate Cheesecake, Raspberry Pavlova, Lemon Meringue Pie, Knickerbocker Glory, Rocky Road Sundae and Raspberry and Vanilla Cheesecake. 

In May and June, more than 75,000 members joined in to vote in our online poll and via the Co-op app to help us decide which new ice cream flavour will be served up in the future. 

Raspberry Pavlova, Caramel and White Chocolate Cheesecake and Lemon Meringue Pie flavoured ice cream received the most votes from our members. 

Our members told us how much they enjoyed turning their hand to product design and sharing their ideas to help us dream up a fabulous member-inspired Co-op ice cream flavour to add to our 900ml standard tier tub range.

It was a privilege to work with so many Co-op Members to develop our new Raspberry Pavlova ice cream. It is so interesting and informative to understand what our members would like to see in our ice cream range. 

We were overwhelmed with the number of responses we received and thoroughly enjoyed reading why members had chosen a particular flavour combination. We were also very impressed with the high level of votes for our shortlisted ice cream flavours too. 

Having worked with our supplier to get the flavour just right, we’ve decided to develop an amazing member-inspired Raspberry Pavlova ice cream, which we think will sit perfectly alongside the current range. 

We cannot wait for our member-inspired ice cream to hit freezers in March. So, keep your eyes out for it and let us know what you think…we think it’s going to be a huge hit! 

Our creative members also came up with some exciting new concepts for our range of ice cream cones, which will help inspire future new products. 

One lucky Co-op Member also won a tub of delicious ice cream every week, for a month just for joining in.

  2. Why oh why did you stop producing/selling the espresso coffee ice cream tubs?? The best I have ever tasted!! I worked in Coop and many customers complained when it was removed

  6. Disappointed with the choice. Caramel and white chocolate much more innovative and interesting. Raspberry ice cream has been around since raspberry ripple in my childhood.

    • I agree raspberry and pavlova are hardly new.
      How about vanilla ice cream with chocolate flakes and salted caramel ripple. Or red velvet ice cream.
      Now that’s innovative! Ask members to vote on their favourite ice cream.

  7. Maybe avoid eating ice cream at all…. teeth rotting, weight increasing, negligible nutritional value and Type-2 diabetes risk !!

    • Fair enough, I do like it. Raspberries are fresh and delicious and with pavlova, lovely, but it is not new. Just my opinion and many others it seems.

    Something a little more revolutionary that has not been done to death would be really good.

  21. Possibly my grandchildren will love this! For me however a massive disappointment as:
    1: Raspberries are massively overused in recipes these days, presumably as they are seen as a more ‘sophisticated’ version of strawberries. They are PLENTY of other lesser known fruits which could be viewed as acceptable to the more ‘discerning’ palate (passion fruit anyone?). Pavlova is very old hat too!

    2: I have always HATED raspberries!
